Start by making the sauce. Combine the pineapple juice, BBQ sauce, brown sugar, sea salt, ginger, garlic powder, and minced onion in a mixing bowl, give it a good stir, and set it aside. It’s going to smell incredible and you haven’t even turned the stove on yet.
Season your pork chops generously with salt and pepper on both sides — or if you’re going the chicken route, same deal. Either one works beautifully here and the process is exactly the same all the way through.
Heat a drizzle of oil in a large skillet over medium-high heat and add your protein. Sear for about 2 minutes per side until golden, then transfer to a plate. They won’t be cooked through yet and that’s totally fine — they’ll finish up in the sauce, which is where all the magic happens anyway.
Pour the sauce into the same skillet and bring it to a boil, then reduce the heat to medium-low. The sauce will be on the thinner side at first — if you prefer it thicker and more of a glaze, just mix together a tablespoon of cornstarch with a tablespoon of water and stir it right in. Return the pork chops or chicken to the skillet and let them simmer in that gorgeous sauce for 8-10 minutes, flipping halfway through. Pork chops are done at an internal temperature of 145°F, while chicken needs to reach 165°F.
