Place the chicken, black pepper, and salt into a Ziploc bag. Seal and toss until the chicken is evenly coated. Refrigerate for at least 3 hours, or up to overnight, to allow the seasoning to penetrate the meat.
Preheat the oven to 275°F. Set a wire rack on top of one baking sheet and line a second baking sheet with parchment paper.
Add the flour to a shallow dish and set aside. In a mixing bowl, whisk together the eggs, buttermilk, and hot sauce, then set aside.
Pour oil into a Dutch oven fitted with a thermometer and heat over medium-high heat until the oil reaches 320–325°F.
While the oil heats, bread the chicken. Dredge each piece in the flour, then dip into the buttermilk mixture, allowing any excess to drip off, and dredge again in the flour. Place the coated chicken on the parchment-lined baking sheet. Repeat with the remaining pieces.

Transfer the fried chicken to a mixing bowl, add your favorite seasoning, and toss to coat while hot.
Move the seasoned chicken to the prepared wire rack and place it in the oven to keep warm. Repeat the frying process with the remaining chicken strips until all batches are cooked.
