If you are looking for 5 layers of quesadilla goodness or a meal inspired by Tex-Mex flavors, I have just the thing!  It’s called Quesadilla Pie.  It’s a savory dish comprised of 5 layers of tortillas with all the fillings.  When I asked Andrew to describe it, he said “it’s good.  It’s really good”, then proceeded to keep eating so that was all I got out of him 😊 It’s easy to make and very mild to accommodate any palette.  I wouldn’t consider it a spicy dish, but you can customize it to spice it up or spice it down. Easy Taco Skillet is perfect for Taco Tuesday or any time you are looking for some Tex-Mex flavors.  It’s very easy to make, is packed full of flavor, and is a versatile recipe.  When I asked Andrew what his thoughts were, he said “it’s good”.  What he means is it’s cheesy, the beef is spicy, the veggies are fresh, and it has some heat to it but it’s not overpowering.  I would say it’s like taco soup in taste (if you are familiar) but is much heartier. We made Taco Rice with Queso earlier this week and it’s probably one of my favorite new recipes we’ve tried lately!  It’s a one-pan recipe with meat, taco seasoning, and rice that is coated in warm, melted queso.  Talk about delicious!  The rice is perfectly seasoned and tender, and pairs well with the meat, but my favorite part is the queso.  You drizzle some over the top of the dish before serving and then add more and more and more until you have the appropriate amount (aka a lot) of queso on your plate. Don’t mistake this recipe for a burrito bowl.  You don’t add lettuce, tomatoes, shredded cheese, salsa, etc. on top (but you sure can!).  You simply enjoy a bowl of taco meat, rice, and queso.  And it’s amazing. Summer is fast approaching and one thing I look forward to eating more of is salads.  There is something about a big bowl of leafy greens with all the fixings that screams summer.  It’s a healthy meal and is light and refreshing on a hot day.  You also don’t often feel like you overate with a salad, and you can customize the ingredients to match your tastes.
