Festival Foods sells these wonderful extra meaty baby back pork ribs.  They are approximately 3lbs per package and have the most tender meat.  I bought 2 packs and cooked them in a slow cooker with different BBQ sauce recipes.  They were phenomenal!  The key is low and low for tender meat.  The meat falls right off the bone and melts in your mouth.  If you like ribs, you must try these recipes! Slow cooker meals are great for any time of year.  Simply set it and forget it and you have a tasty meal that is hearty, filling, and will feed the whole family.  That’s what my recipe for Slow Cooker Shredded Thai Curry Chicken is…. simple but delicious.  The chicken is braised in a coconut-curry mixture and is moist and tender.  The coconut-curry is Thai style with a base of coconut milk, onions, peppers (spicy), sugar (sweet), fish sauce (tangy), and lime juice (citrus)…it’s like a flavor explosion in your mouth.  You then finish the dish with fresh herbs and serve it over a bed of rice. The 4th of July is right around the corner and as things seem to be returning to normal, I’m sure a lot of people are planning a gathering with friends and family to celebrate.  I know we sure are!  The weather is predicted to be beautiful and sunny, and we haven’t entertained in a while, so we are really looking forward to the holiday. Are you ever hosting a party or having a few guests over for dinner but don’t know what to serve?  I always struggle with what to cook because I want my guests to enjoy the meal but also want time to socialize and not be stuck in the kitchen.  Pulled chicken or pulled pork is always a good option.  You can prepare it in the slow cooker so it’s no fuss, it feeds a crowd, and is great to serve for a build-your-own-sandwich bar.  Or you can make it for yourself to enjoy for meals through the week or to freeze for later. With the low temperatures we’ve had lately I want to hunker down and have a hot meal after work.  Chicken Apple Chili is my new favorite go-to meal!  It’s a bit non-traditional but is very easy to assemble, is light and refreshing, and is the perfect fall meal.  Plus, it comes together in just a few hours (set it and forget it) so you aren’t waiting 4-8 hours like traditional chili. The recipe can be found here. You need a slow cooker for this one-pot recipe.  Add all ingredients to the bowl of the slow cooker, except the apples, and stir together.  Cover and cook on high for 2 hours.  Serve with chopped apples on top.  Easy peasy!
