I’ve been craving Lemon Chicken for quite some time and finally found the perfect day to make it!  This recipe is a homemade version of the take-out classic that tastes just as good, if not better, then what you would get in a restaurant.  It’s fairly simple to make and delivers a delicious balance between tangy and savory flavors, with crispy chicken and a citrus sauce. Fall will be here before you know it.  The leaves are already starting to change colors, the weather is cooling down, and our appetites are changing from light and refreshing foods to warm and comforting foods.  One of my favorite recipes for fall (or winter, but I’m not ready for those cold temps yet) is Chicken Wild Rice Soup.  The recipe can be found here. This flavorful soup is hearty and delicious, and loaded with fresh vegetables, chicken, and wild rice.  It’s an incredibly satisfying meal on a cool fall day.  Here’s how you make it: Start by making the wild rice according to package instructions.  The rice can then be set aside until you are ready to use. Orange Chicken is sure to be a hit at your dinner table.  The tender chicken is fried crisp and coated in a thick orange sauce.  There is no lack of flavor in this sweet and tangy dish.  It’s one of my favorite Asian dishes and will make you forget about takeout. The recipe can be found here. Start by cubing the chicken into small pieces.  Then add the chicken to the batter and toss to coat.  Let the chicken sit in the batter for about 10 minutes, then toss again. Heat about 2 cups of peanut oil in a wok or skillet.  I prefer to use a wok because it’s easier to stir and contains a lot of oil splatter, but you will get very similar results with a skillet.  Add the chicken and fry until crispy, making sure the chicken is also cooked through.  Remove the chicken to drain while you make the sauce, keeping the chicken … Continue reading

Our glorious spring weather disappeared quickly with a dusting of snow so we turned to some heartier dishes for this week’s menu. One of the dishes this week is Speedy Baked Ziti. I was a fan of the Sopranos on HBO and all of the characters loved Carmella’s Ziti and a dish that brought the family together for Sunday dinner so when I ran across this recipe in Food and Wine, I had to give it a try! Another recipe this week is our Southwestern Pot Roast, a very simple recipe for the slow cooker that we serve with  provides another great meal with leftover pot roast used for Shredded Beef Quesadillas, here is our video for the quesadillas.
