Friday night is pizza night at our house.  With COVID, we’ve been cooking at home a lot more than ordering in or going out to eat so we’ve taken to preparing our own pizzas from scratch at home.  It’s been fun to play around with toppings and be creative with what we add to each pizza.  You can definitely stick with the traditional toppings if that’s what you prefer on pizza, but we like to branch out and make each pizza unique. Buffalo Chicken is an obsession of mine and seems to be a very popular food item in general.  Most people I talk to have a favorite buffalo chicken dish of some kind.  I don’t know what it is that draws me back but it’s SO juicy and flavorful…. I could eat it every night of the week. Recently, we made Crock Pot Pulled Buffalo Chicken.  I have a long list of why I love this recipe but the gist of it is, it’s juice, spicy, simple to make, and absolutely delicious!  It can be a meal by itself or used in sandwiches, salads, wraps, tacos, dips, on pizza, and more.  We chose to use it in sandwiches.  It’s a crock pot meal and makes a healthy portion so you’ll be able to eat it for a few days or serve to a crowd. St Patrick’s Day is a fun holiday for everyone!  You can usually find some type of celebration around town whether it be a parade, green beer at your favorite bar or specials on Irish food at restaurants.  Even if you aren’t Irish, it’s fun to participate in the festivities. Spicy Chicken Rigatoni is hands down one of my top 5 favorite pasta dishes!  It has large pieces of tender chicken, perfectly cooked noodles, and a lot of heat (in a good way).  Should I go on?  There is as little or as much garlic as you would like, alfredo sauce, marinara sauce, and butter…. yes, butter…. for a wonderfully creamy sauce. This dish is so simple to make and tastes amazing.  You’ll think you’re eating at a fancy Italian restaurant.  Perfetto! The recipe can be found here. Mardi Gras falls on Tuesday, February 25th this year.  Traditionally, the days leading up to Lent, people would binge on rich/fatty foods in anticipation of fasting or limiting intake of certain foods.  Mardi Gras translates to Fat Tuesday and is celebrate the day before Ash Wednesday, making it quite the celebration! New Orleans is famous for its Mardi Gras parties.  I’ve been to New Orleans and enjoyed some awesome food but have never participated in the Mardi Gras festivities…maybe someday I’ll get back!  I want to celebrate Mardi Gras this year with a delicious feast.  I’m thinking traditional New Orleans foods with a little twist!  I’ll be making Muffuletta Dip and Chicken and Sausage Gumbo. Chicken Satay with Peanut Sauce are perfectly grilled chicken strips that have been marinated in a flavorful sauce.  They are perfectly sweet and tangy and make an easy dinner.  Don’t forget to drizzle the leftover peanut sauce on top of the skewers before serving! The recipe can be found here. Start by slicing the chicken breasts into strips and set aside. Then prepare the marinade by combining the yogurt, ginger, garlic, and curry powder in a mixing bowl.  Add the chicken to the marinade and toss to coat.  Cover with plastic wrap and place in the fridge for up to 2 hours. While the chicken in marinating, soak the skewers in water.  I like to add water to a drinking glass and place the skewers inside. Chicken Egg Roll in a Bowl combines the delicious flavors of your favorite Chinese restaurant appetizer in a one pan!  It’s a delicious spin on a classic egg roll.  This dish is quick to make, healthy to eat, and will change the way you eat egg rolls 🙂 The recipe can be found here. Start by heating a large skillet over medium heat.  Add the ground chicken and heat until completely cooked.  You can also substitute ground turkey or ground pork, if preferred. Next, add the garlic powder, fresh ginger, green onion, and soy sauce to the skillet.  Stir to combine and heat slightly. Apple Cider Chicken & Apples is the ultimate fall dish!  Think juicy chicken, tender apple slices, the crisp taste of apple cider……my mouth is watering just thinking about it 🙂  Your whole kitchen will smell like fall with this dish.  It’s a healthy and simple fall meal. The recipe can be found here. Start by heating a large skillet over medium-high heat.  Add the olive oil and onions and cook until soft and translucent. Then add the chicken, season with salt and pepper, and cook until the chicken is about 80% done.  You only want to cook the chicken about 80% of the way because it will continue to cook while you prepare the rest of the dish.  Make sure to stir frequently so all sides of the chicken heat evenly. With the low temperatures we’ve had lately I want to hunker down and have a hot meal after work.  Chicken Apple Chili is my new favorite go-to meal!  It’s a bit non-traditional but is very easy to assemble, is light and refreshing, and is the perfect fall meal.  Plus, it comes together in just a few hours (set it and forget it) so you aren’t waiting 4-8 hours like traditional chili. The recipe can be found here. You need a slow cooker for this one-pot recipe.  Add all ingredients to the bowl of the slow cooker, except the apples, and stir together.  Cover and cook on high for 2 hours.  Serve with chopped apples on top.  Easy peasy! With the cold weather approaching, I thought it would be fun to make a Mediterranean based meal, and imagine I’m in warmer weather, perhaps sitting on a beach somewhere 🙂  I made Chicken Gyros with Tzatziki Sauce for the main course and served Mediterranean Layered Hummus on the side.  Both are easy to make, flavorful, and healthy! Chicken Gyros with Tzatziki Sauce are filled with spiced chicken, fresh veggies, and a tangy homemade sauce, and are served on warm pita bread.  The tangy homemade sauce is Tzatziki Sauce, which is a Greek yogurt-based sauce with cucumber and fresh herbs added.  These gyros are incredibly tasty!
