Winter is the best time of year to have chili!  It’s hearty, delicious, keeps you warm on a cold day, and is super easy to make.  One thing I love about chili is the “set it and forget it” mentality.  Once you combine the ingredients and set the timer, the slow cooker does all the work and you have a wonderful meal 4-8 hours later.  I personally like this on busy weekends because we don’t have to worry about dinner, spend time planning and cooking, etc. but still get to enjoy a nice meal.  I have two different chicken chili options to share with you.  I like a bit of heat/spice in my chili and think both recipes have the perfect amount.  You get an amazing combination of chicken, veggies, and spices without it being too overwhelming.  If you are anything like Andrew and love spicy food, you can always … Continue reading

Valentine’s Day is just around the corner and I’m feeling the love.  Our house is decorated with everything red and pink, I’ve picked out the perfect Valentine for my sweethearts (yes, I’m including the dog 😊), and we have a wonderful menu planned.  A lot of people like to go out to eat on Valentine’s Day and there is nothing wrong with that, but we usually opt to stay in and prepare a nice meal together.  It takes away from the rushed atmosphere you often feel at a restaurant on a busy day and allows you to really spend time together and do something fun together.  We both love to cook so it’s the perfect option for us!    The menu we prepared has a few new items, but everything is easy to make.  We’ll start with a Caprese Salad appetizer and use a heart-shaped cookie cutter to make the … Continue reading

Every time I shop at Festival Foods I have to checkout the Meat Department because they always have a large assortment of prepackaged meal options. You can find bratwurst, burger patties, marinated chicken, pork chops, and much more. One of my favorite things to buy is Crusted Chicken Breasts. They are available in a variety of flavors and are easy to make for dinner because all you have to do is bake them. I bought 2 different flavors during my last trip to the store, Parmesan Crusted Chicken and Tortilla with Cheese Crusted Chicken. I thought it would be fun to do a taste test to see which one we liked better. If Frank’s Red Hot sauce is one of your favorite pantry items, this recipe for Spicy Chicken Meatballs will instantly become a favorite meal! Although very simple to put together, the sauce has such depth of flavor your family may believe it took you hours to make such a delicious meal. When I suggest this for dinner, no one turns these meatballs down as an option for dinner when I suggest them. A side dish of Cilantro Lime Rice complements these meatballs well and a simple recipe to make as a side dish. This recipe is delicious as a main course but you can also use this recipe to make what we would call a Banh Meatball sandwich using a baguette, sliced in half and spread with mayo and mustard, a little carrot sliced matchstick size, sliced jalapeno,and cilantro leaves. If you are anything like us, and love watching Game of Thrones on Sundays, then you might celebrate with a tasty meal to go with your viewing experience! For the last episode, we decided to go with a themed recipe and make something that you might find in Westeros, with some modern updates of course. We chose to make a Chicken Pot Pie fit for a king! The recipe we followed was for a 13×19 pan, but we modified it slightly to make it look like a more authentic Game of Thrones Pie. Don’t worry, this was not a Frey Pie (book reader joke). We followed the recipe available on our site almost completely, until we got to actual pie section.  What’s not to love about sun-dried tomatoes, chicken, and pasta with a healthy kick of red pepper flakes! This dish comes together quickly with wonderful rich flavor, a perfect evening meal for a busy family. Let’s get cooking. Chicken Pasta with Sun-Dried Tomatoes  Ingredients • 3 large garlic cloves, minced • 1 jar (4 oz.) sun-dried tomatoes in oil • 1 lb. boneless, skinless chicken breasts cut into 1-inch cubes or larger • kosher salt • paprika • 1 cup heavy whipping cream • 1 cup mozzarella cheese, shredded • 1/4 cup freshly grated Parmesan, plus more for serving with the pasta • 8 oz. penne pasta • 1 Tbsp.   We had to show Dad the love on Father’s Day so that means cooking a favorite meal and watching a movie together. Planning our Father’s Day meal was easy, we chose one of his favorites  – Kung Pao Chicken with Noodles. We love this recipe and usually make it with Smart Chicken®. These products are raised without animal byproducts, antibiotics, or hormones, and are processed using purified cold air instead of adding a non-potable water as most other chicken products are processed. One note about this recipe, a single batch never works around our house, we love the leftovers! We try to always have the pantry ingredients available because this meal can be prepped reasonably fast when the mood strikes. Here is the recipe link.
