Is anyone else questioning why they live in MN with the weather we are having this week?  If you are looking for a quick 30-minute meal, that is also warm and hearty, to get you through the cold weather I have the perfect solution.  It’s Chicken Taco Soup. The soup is loaded with chicken, beans, corn, and tomatoes, and is packed full of flavor.  Most of the item you probably already have in your pantry, so it’s easy to whip together during the week.  It’s the perfect hot meal on a cold winter night! For many years I thought the word “slider” meant a tiny hamburger, but boy was I wrong!  Sliders are small sandwiches made with slider rolls that come in a variety of flavors, and they are all the rage.  Think meat and cheese melted together in the oven on a crisp roll – yum! Zucchini noodles are all the rage and a low carb way of enjoying pasta.  If you have a spiralizer you can easily make your own “zoodles” but if you don’t have a spiralizer you can find pre-spiraled noodles at your local Festival Foods.  I think zoodles are a light yet delicious substitution for traditional pasta noodles.  They will fill you up but without the heavy, overly-full feeling, if that makes sense. My new favorite recipe is Zucchini Noodles with Pesto Chicken.  It’s super easy to make and only takes a few ingredients! The recipe can be found here. Chicken Lo Mein is a quick and easy meal to satisfy your cravings.  It can be made in about 30 minutes so it’s perfect for a weeknight meal or when you need to whip something up on a busy weekend with little time.  Plus, it’s enough for 4 so the whole family can enjoy this dish…. or you can enjoy it by yourself with plenty of leftovers 🙂 The recipe can be found here. Start by boiling water and cooking your noodles.  I like to use angel hair noodles or thin spaghetti noodles, but you can use any long noodle.  I’ve also made this dish with whole wheat noodles and you can’t tell a difference (if you’re cooking for a picky eater). Most Minnesotans are familiar with kabobs because we love to grill when the weather is warm.    However, if you aren’t familiar with kabobs you are in for a treat!  Kabobs are basically cubes of meat, fish, vegetables, fruit, and other foods placed on a skewer and grilled to perfection.  And with the MN State Fair recently ending all I can think of is food on a stick so blogging about kabobs seemed like the perfect fit! Labor Day Grilling It’s time to fire up the grill for your Labor Day celebration!  I plan to spend the day outside enjoying the weather with family and friends.  Whatever you plan to do, I hope you enjoy some delicious food and get good use of your grill before cooler weather hits.  It’s the perfect day for grilling and a picnic. Winter is the best time of year to have chili!  It’s hearty, delicious, keeps you warm on a cold day, and is super easy to make.  One thing I love about chili is the “set it and forget it” mentality.  Once you combine the ingredients and set the timer, the slow cooker does all the work and you have a wonderful meal 4-8 hours later.  I personally like this on busy weekends because we don’t have to worry about dinner, spend time planning and cooking, etc. but still get to enjoy a nice meal.  I have two different chicken chili options to share with you.  I like a bit of heat/spice in my chili and think both recipes have the perfect amount.  You get an amazing combination of chicken, veggies, and spices without it being too overwhelming.  If you are anything like Andrew and love spicy food, you can always … Continue reading

Valentine’s Day is just around the corner and I’m feeling the love.  Our house is decorated with everything red and pink, I’ve picked out the perfect Valentine for my sweethearts (yes, I’m including the dog 😊), and we have a wonderful menu planned.  A lot of people like to go out to eat on Valentine’s Day and there is nothing wrong with that, but we usually opt to stay in and prepare a nice meal together.  It takes away from the rushed atmosphere you often feel at a restaurant on a busy day and allows you to really spend time together and do something fun together.  We both love to cook so it’s the perfect option for us!    The menu we prepared has a few new items, but everything is easy to make.  We’ll start with a Caprese Salad appetizer and use a heart-shaped cookie cutter to make the … Continue reading
