Instant Pot Cajun Chicken with Rice has become a family dinner favorite at my house.  It’s easy to make, delicious, and something simple you can make in one pot.  It’s the perfect comfort food on a cold night…or any busy night when you don’t have a lot of time to cook!  Even better, it saves on dishes, so you don’t have to spend too much time on cleanup duty 🙂 The recipe can be found here. Start by chopping the veggies. Then slice the chicken breasts, either into 1-inch pieces or strips.  Place the chicken in a bowl with 1 Tbsp Cajun seasoning and toss to coat.
