Instant Pot Chicken & Vegetable Pad Thai is simple weeknight meal that is ready in no time!  It’s packed with tender chicken, lots of veggies, noodles, and a flavorful sauce.  Pad Thai sauce is a little salty, fairly nutty, and a little sweet in flavor.  I think it’s similar to peanut sauce, which tastes great on just about anything 😊 This is a one-pot meal your whole family will love! Are you ready for the Kentucky Derby?  It’s usually held on the first Saturday in May, making it this upcoming Saturday, May 7, 2022.  A lot of people like to gather with friends and family to watch the races and enjoy some good food and drink.  I believe it’s known as “the greatest two minutes of sports” so why not spend all day in the kitchen for 2 minutes of cheering pleasure? 😊  Kidding…it’s a very fun horse race to watch! Mediterranean Turkey Bowls with Lemon Rice are my new favorite “bowls” to eat and quite honestly, I don’t think I’ll ever make regular rice again – lemon rice is where it’s at!  These bowls are FULL of flavor.  You have a tomato salad that is incredibly fresh, a Tzatziki sauce that is creamy and tangy, ground turkey that is perfectly seasoned and tender, and fluffy rice that is infused with a wonderful citrus flavor. The ultimate handheld slider sandwiches are Herbed Chicken Parmesan Sliders.  They are made with ground chicken, not traditional breaded chicken, and are perfect for a crowd or when you want a lighter dinner.  Top with melted mozzarella cheese, fresh marinara sauce, and crisp basil, and you have the perfect slider!  I think the sliders taste best on toasted ciabatta rolls (who doesn’t love ciabatta?) but slider buns will also work just fine.  The ciabatta makes the sliders feel more authentic and Italian. My first step is to bake the ciabatta rolls.  I buy bake and serve rolls, so I always get that out of the way before I prep any of the other ingredients.  Then I set them aside to cool while working on the rest of the recipe.  You can skip this step depending on the type of rolls you are using. Greek Chicken Lettuce Wraps with Tzatziki Sauce are super easy to make, healthy, and refreshing.  They are packed with zesty chicken, cool cucumbers, crisp tomato and onion, and tangy tzatziki sauce.  It’s a burst of Mediterranean flavor!  For us, these are simple weeknight meal.  However, they would make great lunches because you can meal prep ahead of time and they are pretty light vs. filling. I recommend using bib lettuce, butter lettuce, or romaine hearts.  They bib and butter lettuce create these “cups” for the ingredients to sit in and the romaine lettuce wraps the ingredients together well without ripping.  If a lettuce wrap isn’t your thing, swap out the lettuce for a tortilla. Everyone loves a good Chicken Bacon Ranch Sandwich, but have you ever tried Chicken Bacon Ranch Sheet Pan Nachos?  Let me tell you…they are yummy!  Super easy to make, super quick to make, super easy to cleanup, and they work well as an appetizer (or as a meal for 2…guilty as charged).  The chicken is juicy and tender, the bacon is salty and crisp, and melted cheese brings it all (or holds it all) together.  My favorite part is the ranch dressing that’s drizzled over the top.  It’s not just a bottle of ranch dressing but a homemade mixture that is rich and creamy, and you will want some in every bite! We recently tried a recipe for Bacon Apple Chicken Burgers with Dijon Sauce, and it was amazing!  The burgers are a little sweet from the apples and a little salty from the crispy bacon.  Add the Dijon sauce and you have a little slice of heaven!  The Dijon sauce is a combination of Dijon mustard, mayonnaise, and maple syrup so it is sweet yet tangy, and I could not get enough of it.  All the flavors in this burger pair well and your taste buds will be happy 😊 The ingredient list looks long but these burgers really are easy to make.  And you will most likely have most of the ingredients at home already, so give them a try! St Patrick’s Day is fast approaching.  Do you have plans to celebrate?  I’m admittedly well past the years of bar hopping downtown to drink some mediocre green beer in an overcrowded bar…. Instant Pot meals are quickly becoming a favorite of mine on night we are busy and don’t have a lot of time to spend cooking but still want a nice meal.  We probably use our Instant Pot more in the fall and winter than we do in the spring and summer because it’s great for warm and hearty meals.  Recently we made Instant Pot Chicken Bruschetta Pasta.  It was delicious! The chicken was moist and tender, the noodles were al dente (I hate when they become too soft and mushy), and the bruschetta topping added some lovely color and a bit of freshness to the dish.  The flavors pair well together and left us feeling quite satisfied! Hawaiian Sheet Pan Chicken is a quick an easy, yet super tasty, weeknight meal.  The entire meal is made with one sheet pan so cleanup will also be quick.  You do need a cutting board, mixing bowl, and knife, but that’s still less dishes than normal, right?  I think it took me 60 min TOPS to make this dish, including prep time, bake time, and cleanup. This dish is full of flavor!  The chicken is moist and juicy, the veggies are tender, the BBQ sauce adds a little tanginess, and the pineapple add a wonderfully fresh, citrus flavor.  My favorite way to serve this is over a bed of rice but mashed potatoes or a salad would be a good substitute.
