Start by preparing the chicken mixture. In a large mixing bowl, combine the ground chicken, green onions, grated ginger, minced garlic, coconut aminos, rice vinegar, maple syrup, sesame oil, chili crisp, and black pepper. Mix everything together until fully combined and evenly seasoned.
Next, make the chili sauce. In a small bowl, whisk together the coconut aminos, minced garlic, rice vinegar, chili crisp, and sesame oil until smooth. Set the sauce aside while you cook the dumplings.
Heat a large skillet over medium-low heat and add a drizzle of avocado oil. Using a 1 tablespoon cookie scoop, portion the chicken mixture directly into the skillet, spacing each mound slightly apart. You may need to use two skillets depending on size. You should end up with about 16–18 portions. Let the meatballs cook undisturbed for 3–4 minutes so the bottoms can lightly brown.
Once the bottoms are set, place a wonton wrapper over each piece of chicken and gently press it down so it covers the top and sides. Be careful not to touch the hot pan while doing this. Reduce the heat to low, then pour about ¼ cup of water into the skillet around the dumplings. Cover immediately and let them steam for 4 minutes. Add another ¼ cup of water, cover again, and continue steaming for another 4 minutes.
Remove the lid and allow any remaining moisture to cook off. Continue cooking until the chicken is fully cooked through, reaching an internal temperature of 165°F.
To finish, drizzle the prepared chili sauce over the dumplings and sprinkle with sesame seeds and fresh chopped cilantro. Serve warm and enjoy!
