Preheat the oven to 400°F and line two baking sheets with parchment paper.

Add the flour, baking soda, salt, and 1½ sticks of cubed butter to the bowl of a stand mixer. Mix on low speed until the mixture becomes crumbly. With the mixer still running, slowly pour in the milk and mix just until the dough comes together.

Add the shredded cheese and 2 teaspoons of garlic powder, mixing only until combined.

Scoop the dough into mounds about 2 inches wide and place them on the prepared baking sheets, spacing them apart. You should end up with about 16 biscuits.

Bake for 18–20 minutes, or until the biscuits are lightly golden and cooked through.
