These tacos are a fun, flavorful twist on the classic smash burger—perfect for weeknight dinners, casual get-togethers, or any time you’re craving something bold, cheesy, and downright irresistible.

Start by making the jalapeno sauce. Add the cilantro, pickled jalapenos and jalapeno juice (from the jar) to a food processor or blender. Puree until as minced as possible.

In a separate bowl, combine the mayo and sour cream. Add the ranch seasoning, garlic powder, and salt, and stir to combine. Add in the cilantro/jalapeno mixture and stir to combine.

Lastly, add the lime juice and stir one more time. Set aside.

Next, make the street corn. Preheat a grill to 350 degrees F and remove the husks from the corn. Grill the corn for about 10 minutes, rotating every few minutes, until grill marks appear and the corn is cooked through.  Remove from the grill, cool enough that you can touch it, then slice the corn off the cob.

Add the mayo, garlic, lime juice, lime zest, chili powder, and salt to a large bowl and stir to combine. Add the cooked corn, cilantro, green onion, jalapeno, and cheese. Mix until the ingredients are well incorporated. Set aside.

Now, preheat the oven to 250 degrees F and line a baking sheet with parchment paper.

Add the ground beef or ground chicken to a mixing bowl, season with salt and pepper, and form into 6 small balls.

Lay 6 tortillas on the counter and place one piece of meat on each. Press down slightly to spread the meat almost all the way to the sides. You want the meat to be a thin later.

Heat a skillet over medium heat and add one tortilla, meat side down. Use a spatula to gently press down on the tortilla to ensure the meat is flattened. Cook for 5-6 minutes. The meat is so thin that it should be cooked through at this point. If not, give it another 1-2 minutes. Flip over and cook on the other side for 1-2 minutes. This will crisp the tortilla.

Transfer the cooked taco to a baking sheet and place in the oven to keep warm while you cook the rest of the tacos.

When ready to assemble, top each with street corn and drizzle jalapeno sauce over the top.

Serve immediately and enjoy! To eat, fold in half.
