There’s something incredibly satisfying about food you can mix, fold, and quite literally smash—and these Smash Dumplings deliver that joy in the most delicious way. Packed with finely chopped fresh spinach, juicy ground chicken or pork, fragrant ginger, and the savory hit of soy sauce and toasted sesame oil, this recipe transforms simple ingredients into crispy, golden perfection. Each wrapper is filled, flattened, and pan-seared until the edges turn lacy and crisp, while the centers stay tender and flavorful. With green onions for freshness and a quick dip in extra soy sauce, these Smash Dumplings are the kind of fun, weeknight-friendly dish that feels impressive without any fuss.

Start by adding the spinach, chicken or pork, soy sauce, ginger, sesame oil, and 1/4 cup of green onions to a mixing bowl and mix until well combined.

 

Whisk the egg in a separate bowl. Arrange 20 wrappers on the counter. Brush the egg wash over the center of each wrapper. Add a heaping Tbsp of the filling to each then use your fingers to spread the mixture almost all the way to the sides.

Be careful of cross contamination and make sure to wash your hands and the counter well!

Preheat the oven to 225 degrees F and line a baking sheet with parchment paper. Then heat about 2 tsp oil in a large skillet over medium heat.

Once hot, add 4-5 dumplings at a time placing them filling side down. Cook for about 4 minutes then flip over, add 1 Tbsp water, cover the skillet, and continue to cook for about 2 minutes. The steam will finish cooking the meat and crisp the wrapper. Once cooked, transfer to the prepared baking sheet and keep warm in the oven while you cook the next batch(es).

Once all batches are cooked, remove from the oven and transfer to a serving platter. Garnish with additional sliced green onions and add some soy sauce on the side. Enjoy!
