Start by bringing a large pot of salted water to a boil and cook the noodles according to package instructions. You want to reserve about ½ cup of the pasta was before draining the noodles.
Use a large skillet to melt 1 Tbsp of butter over medium heat. Add the garlic and pepper and cook for 1-2 minutes then whisk in the cream.
Add the remaining 7 Tbsp of butter (sliced) and stir to melt and combine. Bring to a simmer and let cook for 2-3 minutes until thickened, stirring occasionally.
Add the parmesan and stir until melted then add the noodles and toss to coat.
Add the reserved pasta water, about ¼ cup at a time, and stir to incorporate and thin out the sauce. If you like thicker sauce you can skip this step, otherwise keeping slowly adding pasta water until your desired sauce level is reached.
You are now ready to portion the pasta between bowls and garnish with fresh chopped parsley. Serve and enjoy!
