Start by laying the egg roll wrappers on the counter in a diamond shape. You should lay out however many wrappers you plan to make – you can make one or many. It really depends on how many leftovers you have and if you want to exhaust all the leftovers as egg rolls.

Add a spoonful of mashed potatoes to the center, this will be the base. You should flatten the mashed potatoes slightly as you have a lot to fill in the egg roll wrappers!

Next, add a slice of turkey, then a spoonful of stuffing, and top with a piece of cranberry sauce.

Brush water around the perimeter of the egg roll wrapper. Fold the bottom corner over the filling, then tuck in both sides, and roll toward the top corner. You want to completely seal in the ingredients. Use a dab of water to ensure the egg roll wrapper stays together.

Set aside and repeat until all egg rolls have been wrapped.

Heat the oil in a shallow fry pan. Once hot, add the egg roll(s) and fry until crispy, about 8-10 minutes. Make sure to rotate every few minutes to crisp all sides and heat the ingredients but don’t overcrowd the pan. Only add 2-4 egg rolls at a time, depending on how big the egg rolls and pan are.

If you are making a large batch, you can transfer the cooked egg rolls to a baking sheet and keep warm in a 250-degree oven while working on the next batch. This ensures all egg rolls are warm when served. If you are only making a few, remove to a paper towel lined plate to drain the excess grease.

Serve warm with gravy on the side for dipping.
