Start by preheating a skillet or grill pan over medium heat.  Form the ground chicken or ground beef into 4 patties and season with salt and pepper.

Grill the burgers for 5-6 minutes per side or until cooked through (165 degrees F for chicken).

While the burgers are cooking you can prepare the sauce.  Add the mayo, chipotles, and lime juice to a bowl and stir to combine.  Set aside.

This step is optional – you can trim the tortilla to be approximately the same size as the patties otherwise they will overlap the meat.  To do this, place a bowl upside down on the tortillas and use a knife to trace around the bowl.  Discard the outer ring.

Next, melt 1 Tbsp butter in a large skillet over medium heat or use a griddle.  Place 4 tortillas in the skillet and top with half the cheese, evenly distributed between each tortilla.  If your skillet isn’t large enough for 4 tortillas, you can cook in batches.

Place a burger on top of each tortilla.  Top each with a spoonful of sauce and spread over the top.  Add 2 slices of bacon, broken in half, followed by Pico de Gallo and shredded lettuce.

Remove from the skillet once the cheese has melted and transfer to plates.

Next, melt the remaining butter in the same skillet.  Add the 4 remaining tortillas and top with the other half of the cheese, evenly distributed between each tortilla.  Cook until the cheese is melted.  If your skillet isn’t large enough for 4 tortillas, you can cook in batches.

Place these tortillas, cheese side down, on top of the shredded lettuce to complete the quesadillas.

You are now ready to slice, serve, and enjoy!
