Start by lining a muffin tin with paper liners.  Alternately, if you want smaller peanut butter cups, simply use a mini muffin tin and you will yield more than 12 cups.

Add the peanut butter, honey, coconut oil, and salt to a blender and blend until smooth and creamy.  Evenly divide between the muffin wells.  You can simply pour directly from the blender.

Add the jam/jelly to a microwave safe bowl and heat for 30 seconds.  Stir and heat again for 15-30 seconds until mostly melted.  Use a spoon to evenly distribute between each peanut butter cup, swirling over the top.  The jam/jelly will sink slightly.  Optional, use a toothpick to swirl the jam/jelly into the peanut butter.

Place the muffin tin in the freezer for 20-30 minutes or until the cups have hardened.

When ready to serve, simply peel off the paper liner and enjoy!

Alternately, you can remove all paper liners and store in an airtight container in the fridge.  Keep all leftovers in the fridge so they don’t start to soften and melt.  Let sit at room temperature for a few minutes before eating.

Start by preheating the oven to 350 degrees F and line a 9×13 baking dish with parchment paper.

Prepare the bottom layer.  Add the pretzels to the bowl of a food processor and pulse until finely chopped.  Pour into a mixing bowl and add the sugar.  Melt 2 sticks of butter and pour over the pretzels and sugar.  Stir to combine.

Pour this mixture into the baking dish and press into an even layer, all the way to the sides.  You can use your hands or a spatula to press down.  Bake for 10 minutes then let cool completely.

Prepare the middle layer.  Add the peanut butter and 2 sticks of butter to the bowl of a stand mixer.  Mix until well combined.  Add the powdered sugar, 1 cup at a time, and mix until well combined.  Add the vanilla and mix to combine.  It will be light and fluffy.

Pour the mixture over the pretzel crust and spread into an even layer, all the way to the sides.  It’s easiest to do this with an offset spatula.  Chill in the fridge for at least 1 hour or up to overnight, if making ahead.

Prepare the top layer.  Add the jelly to a microwave safe bowl and heat for about 45 seconds to soften.  Pour over the peanut butter layer and spread in an even layer, all the way to the sides.  Set aside.

Preheat the oven to 350 degrees F.

Prepare the topping.  Add the pretzels to the bowl of a food processor and pulse until finely chopped.  Pour into a mixing bowl.  Add the flour and brown sugar.  Melt 1 stick of butter and pour over the pretzel mixture.  Stir to combine.  Sprinkle all over the jelly layer.

Bake for 15-20 minutes or until the topping starts to brown.  Remove from the oven and let cook for about 1 hour.  Once cool, refrigerate for 1 hour to allow the peanut butter layer to firm back up.

When ready, lift the parchment paper to remove the bars from the baking dish.  Slice into squares, serve, and enjoy!

Leftovers should be stored in the fridge (covered).  Let the bars soften on the counter before serving leftovers.

Start by lining 2 baking sheets with parchment paper and set aside.

Add the flour, baking soda, and salt to a mixing bowl and whisk to combine.  Set aside.

Add the butter and peanut butter to the bowl of a stand mixer and beat until smooth.  Add the sugar and brown sugar and beat until smooth.  Add the egg and vanilla and beat until combined.

Add the flour mixture and mix until just combined.

Using a 2 Tbsp cookie scoop, portion the dough into balls.  Use your thumb to press an indent in the center of each.  The dough might be slightly crumbly – this is OK!  Add about 1 tsp of jam (flavor of choice or do a combination of flavors) into each hole.  Gently form the dough around the jam to create a ball of dough.  It’s OK if the jam isn’t fully enclosed.  Your hands will get pretty messy while doing this 🙂

Place the cookies on the prepared baking sheets, spaced apart.  Refrigerate for 30 minutes to chill the dough.

While the cookies chill, preheat the oven to 350 degrees F.  Press down to slightly flatten the cookies before baking.  Bake for 10-12 minutes or until the edges are set and the centers are soft.

Let cool then serve and enjoy!
